St Mirren's Mark O'Hara twice put the visitors ahead at Parkhead, but Matt O'Riley and Kyogo Furuhashi levelled for Celtic before halftime.
Palma's 86th-minute strike from Anthony Ralston's cross sealed the victory, prompting a rousing ovation for departing goalkeeper Joe Hart.
Hart, who played his final league game for Celtic, will aim to lift his seventh trophy with the club in next week's Scottish Cup final against Rangers.
Celtic had already secured their 54th league title with a win earlier in the week. Despite an early setback from O'Hara's goal, Celtic responded through O'Riley and Furuhashi to level the score before the break.
Palma's late winner ensured Celtic finished the season eight points clear of second-placed Rangers, who drew 3-3 with Hearts.
The draw ended Hearts' five-game losing streak against Rangers, with goals from Lawrence Shankland, Dexter Lembikisa, and Kyosuke Tagawa securing a point for the Edinburgh club.
In other Premiership action, Dundee and Kilmarnock drew 1-1. Gary MacKay-Steven opened the scoring for Kilmarnock, but Luke McGowan equalized for Dundee.
Robbie Deas's late red card reduced Kilmarnock to 10 men, and McCowan missed a penalty in the closing minutes.
The Scottish Premiership concludes on Sunday with matches involving the bottom six teams.
